Yesterday we went to an event called Touch a Truck. Admission was free, but they asked that you bring a food donation to Harvesters, a food donation place for the poor. It took some convincing, but Gwen finally got on the bus. Here she is with Ben waving.
They had all kinds of trucks... garbage trucks, police cars, combines, ambulances.. you name it.
This is Zeke deciding if he's going to drive one of these trucks one day.

She loved seeing a puppy there at the Wayside Waifs dog shelter truck. She eventually will probably want one. I say, keep dreaming!

Sitting Up
Here's gorgeous displaying his new trick... sitting up. Of course, he falls over after a minute or so, but he's just so proud of himself and irresistibly cute!
Garden Talk and Saturdays
It is now butternut squash time at our house. I'm going to make baby food out of it. I was going to let them get a little bigger, but Ben accidentally picked them while mowing. :) I think it will be fine. I'm FINALLY getting some tomatoes too, but not like last year. I'm learning something new every year about gardening. I'm convinced that you have to garden for a long time to figure stuff out unless you've done it in your childhood years. Last year's crop was tomatoes... wonderful tomatoes I had last year. This year is the year of squash. My carrots are pathetic, my cucumbers look like little mutant fingers (by the way, my neighbor has cucumbers the size of your arm), my green beans are in the middle of thousands of weeds and when I pick them there are about enough to hold in one hand. You gonna boil some water for about 10 beans??? My cantaloupes keep getting eaten by bugs. Oh, and the strawberries were good this year. So... it's the year of strawberries and squash. Next year I'm going to get some great stuff... you just watch!!

Whatcha Doin'?
We've been bringing down the popcorn ceiling and painting our bedroom lately. Home improvements with two little ones can be quite difficult. We have had a hard time deciding on the color of our room. (see all the paint samples?) Getting your underwear off of the floor has also been interesting. It's a good thing Ben nor I are type A personalities that have to have everything in order all the time. I'll update you on our progress.

The Tiger's Whisker
A Korean Folk Tale that I found interesting. I've been thinking about it all morning.
A young woman by the name of Yun Ok came one day to the house of a mountain hermit to seek his help. The hermit was a sage of great renown and a maker of charms and magic potions.
When Yun Ok entered his house, the hermit said without raising his eyes from the fireplace into which he was looking: "why are you here?"
Yun Ok said, "Oh, Famous Sage, I am in distress! Make me a potion!"
"Yes, yes, make a potion! Everyone needs potions! Can we cure a sick world with a potion?"
"Master," Yun Ok replied, "if you do not help me, I am truly lost!"
"Well, what is your story?" the hermit said, resigned at last to listen.
"it is my husband," Yun Ok said. "He is very dear to me. For the past three years he has been away fighting in the wars. Now that he has returned, he hardly speaks to me, or to anyone else. If I speak, he doesn't seem to hear. When he talks at all, it is roughly. If I serve him food not to his liking, he pushes it aside and angrily leaves the room. Sometimes when he should be working in the rice field, I see him sitting idly on top of the hill, looking toward the sea."
"Yes, so it is sometimes when young men come back from the wars," the hermit said. "Go on."
"There is no more to tell, Learned One. I want a potion to give my husband so that he will be loving and gentle, as he used to be."
"Ha, so simple, is it?" the hermit asked. "A potion! Very well, come back in three days and I will tell you what we shall need for such a potion."
Three days later, Yun Ok returned to the home of the mountain sage. "I have looked into it," he told her. "Your potion can be made. But the most essential ingredient is the whisker of a living tiger. Bring me this whisker and I will give you what you need."
"The whisker of a living tiger!" Yun Ok said. "How could I possibly get it?"
"If the potion is important enough, you will succeed," the hermit said. He turned his head away, not wishing to talk any more.
Yun Ok went home. She thought a great deal about how she would get the tiger's whisker. Then one night when her husband was asleep, she crept from her house with a bowl of rice and meat sauce in her hand. She went to the place on the mountainside where the tiger was known to live. Standing far off from the tiger's cave, she held out the bowl of food, calling the tiger to come and eat. The tiger did not come.
The next night Yun Ok went again, this time a little bit closer. Again she offered a bowl of food. Every night Yun Ok went to the mountain, each time a few steps nearer the tiger's cave than the night before. Little by little, the tiger grew accustomed to seeing her there.
One night Yun Ok approached to within a stone's throw of the tiger's cave. This time the tiger came a few steps toward her and stopped. The two of them stood looking at one another in the moonlight. It happened again the following night, and this time they were so close that Yun Ok could talk to the tiger in a soft, soothing voice. The next night, after looking carefully into Yun Ok's eyes, the tiger ate the food that she held out for him. After that when Yun Ok came in the night, she found the tiger waiting for her on the trail. When the tiger had eaten, Yun Ok could gently rub his head with her hand. Nearly six months had passed since the night of her first visit. At last one night, after caressing the animal's head, Yun Ok said, "Oh, Tiger, generous animal, I must have one of your whiskers. Do not be angry with me!"
And she snipped off one of the whiskers.
The tiger did not become angry, as she had feared he might. Yun Ok went down the trail, not walking but running, with the whisker clutched tightly in her hand.
The next morning she was at the mountain hermit's house just as the sun was rising from the sea. "Oh Famous One!" she cried, "I have it! I have the tiger's whisker! Now you can make me the potion you promised so that my husband will be loving and gentle again!"
The hermit took the whisker and examined it. Satisfied that it had really come from a tiger, he leaned forward and dropped it into the fire that burned in his fireplace.
"Oh sir!" the young woman called in anguish. "What have you done with it!"
"Tell me how you obtained it, " the hermit said.
"Why, I went to the mountain each night with a little bowl of food. At first I stood afar, and I came a little closer each time, gaining the tiger's confidence. I spoke gently and soothingly to him, to make him understand I wished him only good. I was patient. Each night I brought him food, knowing that he would not eat. But I did not give up. I came again and again. I never spoke harshly. I never reproached him. And at last one night he took a few steps toward me. A time came when he would meet me on the trail and eat out of the bowl that I held in my hands. I rubbed his head, and he made happy sounds in his throat. Only after that did I take the whisker."
"Yes, yes," the hermit said, "you tamed the tiger and won his confidence and love."
"But you have thrown the whisker in the fire!" Yun Ok cried. "It is all for nothing!"
"No, I do not think it is all for nothing," the hermit said. "The whisker is no longer needed. Yun Ok, let me ask you, is a man more vicious than a tiger? Is he less responsive to kindness and understanding? If you can win the love and confidence of a wild and blood-thirsty animal by gentleness and patience, surely you can do the same with your husband?"
Hearing this, Yun Ok stood speechless for a moment. Then she went down the trail, turning over in her mind the truth she had learned in the house of the mountain hermit.

Mexican Turkey Meatballs
OK, seriously, these are THE BOMB!! You must make them.
1/2 C egg substitute
1 can (4 oz) chopped green chilies
1 C crushed cornflakes
1 C shredded lowfat Mexican cheese blend
1/2 tsp seasoned salt
1/4 tsp cayenne pepper
1 lb ground chicken or turkey (I used turkey)
Combine it all and shape into balls on a sprayed baking sheet. Bake at 375 for 15 min, turning occasionally. Serve with salsa if you want.

Meal Plan
So I'm back from Alabama and let's just say that within 5 minutes of me entering my house I was cooking. I looked in the fridge and there were condiments and some leftover fish that no one wanted. So... now that the "chef" is back in town this is what I've planned this week. By the way, I've lost 13 1/2 lbs so far on my diet thing. woo hoo! (I've got a long way to go)

Books and Stories
Today we ventured out in the heat to go to Mike's. It is basically a store full of junk and cheap books. I go for the cheap books part. It is amazing here in Alabama just how many stores they have like this. In fact, I saw one the other day called "dirt cheap." I'll have to go there next. Well... anyway, back to Mike's. The books are kind of willy nilly put here and there and you have to just look and pick out ones that look interesting to you. I found the pearl in the oyster today folks. When I saw this book I just HAD to buy it because it is so bizarre. It was only a dollar and you know you all want to read it.
I've been reading "Chicken soup for the soul" here at my parents and about cry with each story. They are so awesome! Here's a quote I found true. I've been looking around this week at just how many people are staring at their phones and computers... um.. I happen to be looking at one now, but still... and it bothers me some. Anyway, here's the quote.
"Everybody is a story. When I was a child, people sat around kitchen tables and told their stories. We don't do that so much anymore. Sitting around the table telling stories is not just a way of passing time. It is the way the wisdom gets passed along. The stuff that helps us live a life worth remembering. HOT
It was 101 F today at my parent's house. It's so hot we really don't know what to do with ourselves. Here is Zeke all decked out to go to the water park. Um... let's just say a little sunscreen in a toddler's eyes and an overdue nap for a baby don't make for a smashing good time.

Bama Livin'
So we're here in Alabama visiting my parents. My brother came along to keep the peace with my two kids on the airplane... and boy, was I glad he came. Zeke got sick the day before we were scheduled to come and so I was a little nervous about coming...but he's doing better. Here's Gwen stopping to smell the roses.
My sister got Gwen a bubble blower machine. It is the best I've ever seen. She was thrilled.
Zeke got a little bath in the sink from Grandma.

Today we went to the farmer's market here. The peaches here are looking divine and look at these beautiful eggplants.
This eggplant especially caught my eye. :) It has a "nose."
Clay was proud to get his picture made with the eggplant with a nose.
Gwen threw a mammoth fit because she wanted to push the stroller with Zeke in it all by herself and I wouldn't let her. I just walked away and kept saying "who's kid is that anyway?" To console her, one of the kind farmers gave her a nectarine. She was appreciative. Have I mentioned it is HOT here in Alabama? It's supposed to be 99 or higher for the next few days. YIKES!

*baby food- apricots, peaches, avocados, sweet potatoes, carrots- I've made the avocados, peaches and sweet potatoes using my steamer! It's a great tool!
ps.. the sloppy dawgs were a big hit at this house. Look for it on the Rachel Ray site. We used turkey hot dogs.

Don't worry, I'm not going to turn into Al Gore and make a video about how the planet is in trouble. I am trying to recycle more and learn more and I thought someone in the stratosphere might be interested too. Here's some interesting facts.

Conversation with Gwen and Summer
This is what summer is all about. Good friends and ice cream. This is Gwen and her friend Jackson. When she sees this picture she laughs and says "ice cream all over face!" Her speech has really picked up. Last night she woke in the night and I was a little frustrated and after telling her to go to sleep and as I was on my way out she said, "be nice mommy." That's not frustrating at all to hear from your own kid is it? :)

Meal Plan and Food for Thought
Pam got a cookbook for me with Swedish recipes this week and so I'm going to try some of those. I'm excited to see how they turn out. Again, my meal plan will vary depending on what I choose from my pick 5 veggie thing I'm doing. Last week I chose watermelon, zucchini, tomatoes, corn and cucumbers. I got a food steamer last night too. I'll have to let you know how I like it.

Green Eggs and Apples?
This morning Paw Paw was watching Gwen and letting me sleep in a bit. (THANK YOU) and left the table for a split second and Gwen decided to give herself some decoration with her green marker. I came downstairs to discover her eating green slices of apple. The marker from her hands went onto the apple. So much for no artificial colors. It made me laugh. She is so cute!

Cinnamon Roasted Chicken with Pumpkin-Sage Grits
Yeah, I know it sounds gross... but it's not. I tried it tonight and was surprisingly pleased. It smelled like cinnamon toast in our kitchen and you think you're going to bite into something sweet...but no, it's savory. Although I didn't eat the grits, I already had them on the shelf and they got rave reviews. We had it with whole wheat tortillas and hummus and green beans. Enjoy!
Oh, and I doubled the recipe because I have several people to feed here.
4 skinless boneless chicken breast halves
Pam spray
1 1/2 tsp salt
1 tsp ground cinnamon
1/2 tsp ground black pepper
1 1/2 C water
2/3 C instant grits
1/2 C canned pumpkin
1 T snipped fresh sage or I used about oh, 1 tsp dried. (I eyeballed it)
1/3 C shredded cheddar cheese
1. Preheat oven to 400. Spray pan with pam spray. Then put the chicken in and spray the chicken with the pam spray. Then sprinkle 1 tsp of the salt, the cinnamon, and black pepper over the chicken on all sides. Roast for 20 minutes. (Make sure your chicken breasts aren't too thick or they will take more time)
2. Meanwhile, in medium saucepan bring water to a boil, stir in grits and pumpkin and sage and 1/2 tsp salt. Get it off the heat and stir to thicken. Stir in the cheese.
3. To serve, spoon grits onto plate and slap on a chicken breast.
Oh, and I doubled the recipe because I have several people to feed here.

Then sprinkle 1 tsp of the salt, the cinnamon, and black pepper over the chicken on all sides. Roast for 20 minutes. (Make sure your chicken breasts aren't too thick or they will take more time)
2. Meanwhile, in medium saucepan bring water to a boil, stir in grits and pumpkin and sage and 1/2 tsp salt. Get it off the heat and stir to thicken. Stir in the cheese.
3. To serve, spoon grits onto plate and slap on a chicken breast.

On Becoming Eccentric
I think I'm becoming eccentric. I used to think that buying organic food was a bunch of hogwash and basically a waste of money. Now though, I'm starting to turn a corner where I want my own yogurt maker, my own wheat grinder and want to buy local produce or grow my own.
I also have started on the recycling thing. Now we have a tub in our garage for everything to be recycled. I have one for glass, one for paper, one for plastic and one for cans and aluminum. I unplug all chargers unless they are in use. I've started taking shorter showers. What is happening to me? I'm still not on the cloth diaper band wagon, but I want to be.
How are you guys becoming eccentric? Maybe one day I'll be the one wearing gold shoes. I always tell my mom that when you are a certain age that if you feel like wearing bright metallic gold shoes you just do. You get gutsy with age I mean. The trouble with me is that just when I think I'm secure in who I am, something happens and I realize I'm just as insecure as I always was which is terribly annoying! Ok, so maybe not as insecure as middle school ok? I'm proud to say I've moved on from there. You see people, this is how a discussion goes with me. Just ask Beki. Poor thing... I've talked her ears off I think lately. After all... she is my therapist. ;) (for those of you who don't know, she's studying to be a therapist)

Just Livin'

Here's my baby girl eating cereal with her famous smile. :) She is so funny.
Something I've learned recently... not to pull carrots up until the greens are huge. Talk about small carrots! I'm getting green beans now and squash. I'm just WAITING for my tomatoes. Can't wait for my tomato sandwiches. er... tomato lettuce wraps? Well... you can't have it all can you?

Meal Plan
When we have company I just have to have a list of ideas for dinner if it's going to happen. Now that I'm on this diet thing, I just personally omit any starch like the brown rice or corn that the rest of the family eats. Also, I may add some green beans or salad to my meal to round it out. On nights when we have things like pizza I just will eat the salad with grilled chicken and veggies. Did you really need to know all that? um.. maybe? A lot will depend on what I get from the local farmer's too. I'm doing this program starting Saturday where I go and pick 5 items from local farmers and pay a certain amount. I could get 5 of the same fruit or veg, or get different. I'm picking it up at the grocery store near our house instead of going to the farmer's market. It makes buying local much more convenient for me. Here's my ideas for this week.
orange roughy, sweet potatoes, steamed broccoli,
ground turkey patties, sweet pot or squash from garden, salad
shrimp w/ garlic and lemon, linguini, cucumber slices
tilapia (baked), Indian cauliflower (aloo golbi without potatoes)
homemade pizza, salad
cinnamon chicken with pumpkin-sage grits (a recipe I tore out of a magazine at the gym), green beans
zucchini boats, corn on cob, salad
Quick Oatmeal Raisin Pancakes
ok... so I'm not having these right now since I'm on this diet thing, but I've been meaning to share this recipe. I made these a few weeks ago and I thought they were great. They are like oatmeal in pancake form. Gwen loved them with a tiny bit of real maple syrup.
2 C quick-cooking oats
2 C buttermilk
1/2 C egg substitute
2 T canola oil
1/2 C all-purpose flour (I used whole wheat pastry flour)
2 T sugar
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
1/4 tsp salt
1/2 C raisins
1. In a small bowl, combine oats and buttermilk; let stand for 5 minutes. Stir in egg substitute and oil, set aside.
2. In a large bowl, combine the flour, sugar, baking powder, baking soda, cinnamon and salt. Stir in the wet ingredients just until moistened; add raisins.
3. Pour batter by heaping 1/4 cupfuls onto a hot griddle coated with cooking spray; turn when bubbles form on top. Cook until second side is golden brown.
*2 pancakes equals 274 calories, 7 g fat

Holidays
I'm so grateful Ben had a day off today. This was a photo of him this morning with the kids. He helps me so much. :) I am officially weaning Zeke now. It was a very hard decision for me and one I have cried many tears over, but I decided to start taking medicines for my arthritis. I have psoriatic arthritis and it was affecting my knees and making them swell. The swelling isn't good for them and could cause damage to my joints apparently. That is what my rheumatologist said. It was hard to go up and down the stairs and do about anything. The problem is that the meds for this condition do not go with breastfeeding... so I had a decision to make. I decided I'd start the meds and also diet more aggressively and that would be a relief to my joints also. I'm on a program that my brother has been doing called "medifast" and he has lost 82 lbs in 6 short months. It is a very limited plan, but it works. I'm going to miss peanut butter and oats a lot. :) I'll give some updates on here sometimes.

Summer Time
Paw Paw is here for another visit and Zeke decided to drop in on him while he was taking a nap. That boy is GORGEOUS!!!
Last night we went to our neighbor's house for a grill out dinner. It was great. We brought over our slip and slide and the girls had a good time. Here is Gwen and her friend Katie Beth.
Will she ever smile normally? :)
Gwen got a backpack from one of her friend's for her birthday. We have started putting diapers and stuff in there and she carries it everywhere. Cute!
She's starting to get curls in the back of her hair. You know I'm lovin' that!
